Pork and pumpkin (The News & Observer)

Italy's Umbria region and Eastern North Carolina have a lot in common. Both are still major tobacco-growing regions and both are keen on bitter greens, squash and pork in every guise. While traveling around Umbria in the fall a few years back, and again recently, I fell in love with the Italian way of serving pumpkin as a side dish for pork.
